Date brownie






Vit B, iron, potassium, copper and magnesium


  • 250gm medjool dates
  • 6 Tbsp water
  • 1/2 tsp bicarb of soda
  • 2 Tbsp coconut oil
  • 2 free range eggs
  • 2 Tbsp brown sugar/coconut sugar
  • 2/3 cups almond flour
  • 1/2 cup rice flour / flour
  • 1/2 cups coconut cream/cream fresh 
  • 2 Tbsp maple syrup
  • or natural yoghurt 



  • Place the dates after removing the stones in a saucepan 
  • Add the water and the bicarb of soda and slowly heat it up until the dates are soft and moochy
  • Remove form the heat
  • Place the coconut oil in a small bowl and add the eggs.
  • Beat the eggs and oil until light 
  • Measure out your flours and sugar and add them to the egg mixture
  • Add the dates and mix well
  • Place in a baking dish( 20cm x 15cm roughly) and place some chopped nuts on top and smooth it out with a spoon
  • Bake at 160C for 30 minutes, until golden brown but not dry.
  • For the cream 
  • Mix the coconut cream and the maple syrup together.
  • Cut up the date brownies and serve with the cream or yoghurt
